Avocados for Christmas

While planning your Christmas meal, why don’t you throw in some avocados? These delectable fruits are always in season and readily available this winter. Did you know that fresh avocados are a heart-healthy fruit and are essentially the only fruit with good fats? They can be used as a topping or included in the salad. Or, for a fun twist, make some guacamole to delight your guests. And don’t forget, Santa also loves avocados, so try leaving him a bowl of chips and guac to be sure you get on the nice list!

Traditional Guacamole Recipe

Ingredients:

4 ea. avocados, ripe
3 T. freshly squeezed lemon juice (one lemon)
1/2 c. small-diced red onion
1 large clove garlic, minced
1 tsp. salt
1 tsp. freshly ground black pepper
1 ea. medium tomato, seeded, and small-diced
cilantro for garnish

Directions:

  1. Cut the avocados in half, remove the pits, and scoop the flesh out of their shells into a large bowl.
  2. Immediately add the lemon juice, onion, garlic, salt, and pepper and toss well.
  3. Using a sharp knife, slice through the avocados in the bowl until they are finely diced.
  4. Add the tomatoes.
  5. Mix well and taste for salt and pepper.
  6. Garnish with cilantro.
